I’m going the transparency route today and am going to share that I am really struggling with cooking. I don’t love to cook. I don’t fix lovely snacks (off Pinterest of course) for the family in my spare time. My ideals haven’t quite caught up with my reality.
I get stuck in a rut and today’s rut is rather large. Like a cavern. Somehow along the way I put the expectation on myself that dinner would be served promptly at 5:15 (and the house was always picked up by then) when my husband got home from work. As my oldest daughter got married and my oldest son went off to college I relaxed that legalistic notion and mealtime has fluctuated within an hour of that time. We don’t have a bunch of night commitments so this “rule” of mine was just from my twisted little becky homecky mind.
I don’t mind cooking. It’s the “what to eat” decision that irritates me. About a year and a half ago I started printing monthly calendars and planning a week at a time. I choose meals based on what we’re doing during the day (do I want to do it ahead of time or use the crock pot) and what meat is in the freezer. My husband is one of those “gotta have a meat or it’s not a meal” kinda guys, but we live more on a ramen noodles budget. I want to try some new things and vary the menu, trying to incorporate healthier eating (more salads to start).
Today I’m going to hold myself accountable by joining in the Menu Plan Monday over at I’m an Organizing Junkie. I’m not guaranteeing I’ll do this every week, but it’s a start.
Monday: Enchiladas and Mexican Rice
Tuesday: Tuna Patties, french fries, green peas
Wednesday: Broccoli Cheese Soup, sandwiches
Thursday: Chicken Crescents, salad
Friday: Cow Day (oh yea, Chick-Fil-A here we come!)
Saturday: Leftovers. We have my great nephew’s 1st birthday party so we will probably do leftovers (also known as “fend for yourself” night)
Sunday: Omelettes in a Bag, bacon
