Peanut Butter and Chocolate Acorn Cookies

Sometimes you just know when a relationship is going to be beautiful.
That first moment you gaze into the eyes of your child and realize what a huge responsibility and amazing privilege mothering is going to be.
How unprepared you are. A bundle of nerves and fears.
Yet somehow you memorize the moments as the year rush by in spite of your efforts to hold them back.
Because my oldest daughter is expecting our first grandchild (a boy!) the passing of time is both mourned and celebrated.
Grateful beyond words for new life and opportunities for new traditions with grandchildren yet to come.
We’re going to have some beautiful relationships!
Much like peanut butter. And chocolate.
A match made in heaven.
Okay, so maybe it’s not quite as life changing as having a baby but to a chocoholic it is a reason to celebrate!
I’m already plotting and planning all the fun things I’ll get to share when my grandson comes to Nana’s house.
And I thought the days of messy fingers and grubby faces was over for a while. So thankful they’re not!
One day these peanut butter and chocolate acorn cookies will be at the top of my fun list of activities for the grandkids.

Let them roll the dough and eat just a bit. Add the melted chocolate and Hershey kisses and you have the Mom/Nana of the Year award!

You need to double this recipe. Trust me on that.
Peanut Butter and Chocolate Acorns
Ingredients
- 3/4 cup smooth peanut butter
- 3/4 cup sugar
- 1 tsp vanilla
- 1 large egg
- 1 tablespoon flour
- 1/2 cup mini chocolate chips divided
- 48 chocolate kisses wrappers removed
Instructions
- Preheat oven to 350 degrees.
- Beat first 5 ingredients in a bowl using an electric mixer until well combined.
- Use 1/2 tsp dough and roll into a dome shape.
- Bake about 10 minutes or until golden brown, turning baking sheet halfway through baking.
- While cookies are cooling, microwave 1/4 cup mini chips in glass bowl on high, stirring every 10 seconds.
- Dip the bottom of each chocolate kiss in melted chocolate and attach to flat side of cookie.
- Using a toothpick, attach one mini chip to the top of each cookie for a stem.
