These cake mix cookie bars are our family go to recipe for parties, events, church functions and family game night. They are easy and delicious, a throw together scrumptious taste of heaven in a chocolate concoction. I used to call them Almost Like Candy Bars but honestly, just call them delicious!

If you don’t eat eggs this is perfect because there are none!

This is a family favorite not only because of its taste but for the use of simple ingredients. I never take these goodies to a function without being asked for the recipe. You can’t go wrong!

Ingredients

  • devil’s food cake mix
  • margarine or butter (softened)
  • butterscotch chips
  • semi-sweet chocolate chips
  • white chocolate chips
  • Heath English toffee bits
  • sweetened condensed milk

See the recipe card for quantities.

Directions

Preheat oven to 350 degrees F.

I always use nonstick cooking spray in my prepared pan before I add the cake mix.

This is just to make sure there’s no sticking to the bottom and sides.

In large bowl, stir together cake mix and melted butter or margarine.

Make sure butter or margarine is at room temperature. With pastry blender or fork, cut in margarine until crumbly.

Pour cake mix into glass bowl

Bake at 350 degrees F for 25 to 30 minutes in preheated oven or until light golden brown.

Serve chocolate chip cookie bars

These bars WILL harden in a few minutes. Just make sure the chunks of chips are melted enough on top.

Cool completely in your baking pan and serve plain or with whipped topping or a scoop of vanilla ice cream.

I usually just take these easy cake mix cookie bars to potlucks in the same dish but you can also slice and serve on a separate plate.

Tips

  • These bars WILL harden in a few minutes. Just make sure your chips are melted.
  • You can mix and match your toppings (chocolate chips, heath bits, nuts, coconut, etc.) to your liking. You can’t have too much or too many!
  • One substitution is the type of cake mix. I’ve only used a type of chocolate cake mix but be adventurous and try a yellow cake mix!
  • I sometimes double this recipe and put it in a 10×13 (or lasagna size) dish. Allow extra cooking time.
  • I judge this dessert as done when the cake mix that pokes through the top starts to brown. If you don’t cook it long enough it will just be gooier!

Storage

Store these in an airtight container on your countertop. I use tinfoil or bake in a dish that has a lid. I’ve never tried freezing because these chewy chocolate chip cookie bars never lasted long enough!

FAQs about cake mix bars

This is the perfect recipe for jazzing up a plain cake mix. Add any type of baking chip or even a candy like m&m or butterfingers (my personal favorite!)

Chocolate chips are made to retain their shape. They don’t melt as easily as baking chocolate or other types of melting chocolate because they contain less cocoa butter than those chocolatey products.

Condensed milk has a very sweet and milky flavor due to the added sugar and reduced water content. It’s texture is very syrupy which is perfect for sweetening drinks and desserts.
